Need some cooking help!


Since moving to Little Rock and taking on the senior pastorate, Steve and I have started having new comers dinners in our home.  This is a time when those new to the church or new to us can come over to our house for dinner and get to know us on a much more casual basis.  We currently have them once a month.   I love doing these dinners!!!  Any of you that know me personally, know that this is my spiritual gift.  However, I have been searching for new recipes because I seem to use the same ones over and over.........not a problem you say because everyone that comes is always new!  True!  However, my family (and maybe a few elders) are getting tired of the same old thing.  So, I have begun to ask friends for favorite recipes.  My new bloggy friend, Saralynn, (who, by the way shares my name!! yes, my middle name is Lynn) has given me some good ones.  But I need some more.  I was visiting Lisa's blog and she had a great idea to ask her readers for some good, quick recipes....I decided to steal (share) the idea!  

So here goes...if you have a good recipe to share with me please, please do!!  

Here are the parameters:  It has to feed 15-20 people.  It has to be relatively easy.  We have the dinners on Sunday evening and so I only have a few hours to fix it after church.  If it can be prepared the day or night before....perfect!  Since I don't usually know likes/dislikes, it can't be too funky!  Finally, it needs to not have a lot of last minute preparation as I like to greet everyone as they come in and not be stuck in the kitchen!!  

That's it!!!  No pressure, I know, but I am sure some of you out there have something fantastic to share with me.  I will be forever grateful!!!

Ok, here's my favorite:

-Marinade for grilled chicken-

1/2 cup oil
3/4 cup vinegar
1/4 cup water
1 1/2 Tablespoons salt
3 Tablespoons sugar
1 1/2 teaspoons Worcestershire sauce

This would be enough for at least 4 large breasts, so if you multiply the quantities by 4, it should make plenty (or try x3 and make more if you need it).
I usually marinate the chicken overnight and then just toss it on the grill when I'm ready for it.
This makes really great sandwiches on grilled sub rolls with pepperjack cheese, lettuce, mayo, tomato... But it is also great plain.

i know, nothing special. these are what we used to make for small group! oh along with your chicken and noodles that is! :)

One of my favorites is nachos
This makes about eight servings so you can multiply as needed.
1 lb ground beef (or Turkey)
1 packet Taco seasoning
1 medium onion chopped
3 medium tomatoes chunked
1 lb your favorite cheese shredded
1 16 oz container sour cream
1 bag tortilla chips
1 cup shredded lettuce
optional
1 jar jalepeno peppers

Brown ground beef. Stir Taco seasoning and onoins, simmer 15 minutes. Preheat oven to 350 degrees. Line bottom of 9 x 13 baking dish with tortilla chips. Layer sour cream, ground beef, tomatoes, lettuce, and jalepenos over chips. Cover with shredded cheese. Put in oven until cheese melts, about eight to ten minutes.
This could be made the day before, and then just warmed up. We have found that it is better the second day ( if anything is left! )
