Random thoughs and a recipe

I'm answering questions today from this post.

I decided to tackle the random ones. So, here goes..

1. Any places you dream of traveling? I was able to take my dream trip 2 years ago with my mom and travel to Italy. Honestly, I would love to go back with my husband. Another place I dream of going is Norway. I have wanted to go there since I did a report on it in the 5th grade!

2. inspired by Pioneer Woman's Recipe book and her list of kitchen essentials, what's on your list? kosher salt, cast iron skillet, wooden spoons, real butter, garlic!!

3. One I've wondered from time to time...you seem to post and read quite a bit on Sunday mornings...how do you do that with all your church stuff? ha ha, this is a great question. We are a small church and have only one service on Sunday mornings. It starts at 10:30. I try to get to church by 9:30 for set up. Since I only live about 2 minutes from the church, am an early riser, and don't have to get children ready (they do that themselves) that gives me several hours in the morning to blog!!!

4. What do you usually eat for breakfast? How do I answer this question? What ever sounds good? I am not a creature of habit or one who eats the same thing every day (one reason I could never stay on any diet that told you what to eat). So, it could be toast with peanut butter, cereal, eggs, yogurt or a myriad of other things!!!

What is your favorite book of all-time? I would have to say Safely Home by Randy Alcorn. If you haven't read it.....you need to!!

Many of you asked for the recipe from my P365 post yesterday. This is currently a favorite at the Bowyer house. In my house, you know it's good when my boys go back for seconds or eat it as left overs!! Here it is:


Beef, Cheddar and potato pie

2 lbs ground beef
2 carrots,cut into 1/4 in cubes
1 large onion, cut into cubes
2 stalks celery, cut into cubes
1 large clove garlic, finely chopped
1 large baking potato, peeled and cut into 1/4 inch cubes
1/2 cup beer (you could use beef stock instead of the beer)
8 oz sharp cheddar cheese, grated
salt and pepper
2 sheets frozen puff pastry, thawed but cold
1 large egg yolk, beaten with 1 Tbls water.

preheat the oven to 375. In a skillet, combine the beef, carrots, onion, celery, garlic and potato and cook, breaking up the meat, over medium high heat until the beef is cooked through and some liquid has evaporated, about 15 minutes. Lower the heat to medium, add the beer and cook for 10 minutes. Add the cheese and salt and pepper to taste. let cool.

on a floured surface, roll 1 puff pastry sheet into a 12 inch round. place in a 10 inch skillet or deep pie dish. Roll the remaining puff pastry sheet into an 11 inch round. using a slotted spoon, transfer the meat mixture to pie. lightly brush the edge of the crust with some of the egg wash, then pace the second sheet on top press the edges to seal.

place the pie on a baking sheet. brush the top with more of the egg wash and cut an "X" into the pastry center. Sprinkle with kosher salt and pepper. Bake for 25 minutes, tenting with foil if the crust darkens too quicky. transfer to a rack to cool for 15 minutes.

Answering questions as a post is a great idea. I've thought of doing this myself with email questions I've received... but how transparent do I want to be? Hmmm... ;)

Yes! Love Safely Home!! Really, just about anything by Alcorn is amazing. And thanks for the recipe. Looked good. And now it SOUNDS good, too!! I'll be trying it for sure.

I'm going to have to see if I can find puff pastry when we go to Cordoba next time. Definitely can't buy it locally. But this recipe sounds SO good. If I can't find puff pastry, I think a plain old pie crust would do. Not a perfect option, but better than not trying it at all! Thanks for sharing it.

Wow. Funny how posts about food/recipes bring SO many comments. lol I am definately going to try this this week.

The Italy answer makes me SO jealous. I want to go!

I have been meaning to find a good book to read when feeding the baby since that takes up about 3 hours of my day and I am just sitting. I will have to get that one.

Thanks for the recipe so I don't have to decide whats for dinner because sometimes thats the hardest part!
