Worst mom and a call for help

Well, I have certainly gotten the worst mother of the year award.

Or at least I feel like I deserve it.

Jared has been sick since last monday...9 days.
I left for the weekend, which is not bad, but so did my husband. He had a men's retreat to attend Friday-Sunday.  We had worked out where Jared would spend the nights...but didn't plan on him still being sick.  And didn't plan on thinking he might have mono.  Let's just say that the weekend was a bit stressful for me for a while as I tried to take care of Jared long distance. 
I might have had a small melt down.

Monday, Steve was back and took him to the doctor and all tests came back clear.  It is just a bad virus.  I came home Monday night and got Jared one of his favorite dinners....Outback steak, potatoes, broccoli. Though his stomach was still upset, he scarfed down the dinner. 

The child.was.starving. 

He ate a HUGE dinner tonight too.  Come to find out he only ate Ritz crackers while I was gone....he didn't feel up to making himself food.....yep, worst mom.  

Now, I know I am not the worst mom, but I sure felt that way....ugh.

I am glad to say Jared is starting to feel better this morning!!!
So thankful!

Now, for the call for help.

My husband feels called to fast over lent.  He is giving up all rich foods, desserts, etc.  Basically, he will be eating soup and salad. So I am calling on all my foodies out there in bloggy land and asking you to send me your favorite soup recipes.  Preferably not too heavy but also something my son will eat....could be tricky!!!

At then end, I am planning on posting about my favorite ones!

Bring on those recipes!!!!

You are a GREAT mom, don't let yourself be told anything different. If you'd made the choice to stay home you would have thought yourself to be a bad friend. You made the best decision you could at the time given the information you had. Very soon Jared will be needing to take care of himself...this is good practice. (BUT...I know he's your baby!)

it's hard not to be hard on yourself when it comes to your kids, but sounds like he survived just fine.

ugh...i hate that feeling. i think we have ALL felt like the worst mom at some point or another, so don't feel bad. i am excited to see that your husband is fasting. i will post and share a light soup recipe for you to make for him, i have been eating light lately too so i have been looking those up myself.

Ahh - bless your heart - dont feel that way. You're an AMAZING mom!!! I had to laugh at the Ritz crackers though... kids are funny.

Check out the site Recipe.com ... they have everything - I think you can look up only soups as well - maybe it'll help with ideas. I'm not a big soup chef myself... would like to be though - filling but not a lot of calories.

Oh we love soup! I will email you lots of recipes. The easiest ones I have found come from Betty Crocker.

And no worries about the award - I won one last week too. Sent my kiddos to the nanny's before I realized 2 of them had the flu.

It's so easy for us moms to feel that way, but despite your guilt, I know that you know, that you're a great mom.

I'll have to find my soup recipes, but I have a hearing tomorrow, so it won't be until later in the week.

I heart soups!! Go to my friend Misti's blog -- www.huckleberrygumbo.blogspot.com. She has a soup recipe a couple of blogs down, I believe.

Here's a salad recipe (also from Misti, ha!)

This makes about one serving of salad, and 5-6 servings of dressing:

Salad
3 strawberries, sliced
4 blackberries
10 blueberries
5 mandarin orange segments
1 tsp sliced almonds
5 leaves fresh basil
1 cup spring mix greens

Chocolate Balsamic Dressing
3 Tbsp balsamic vinegar
1 Tbsp chocolate syrup
4 oz canola oil
1 tsp minced shallots


...And soup (I got this recipe from someone, I'm sure, maybe you, lol!!):

Chicken Enchillada soup

Ingredients:
- 1 rotisserie chicken (shredded; I just used the white meat)
- 1 can diced tomatoes
- 1 can whole kernel corn
- 1 can pinto beans
- 2 cans water
- 1 Tbs cumin
- 1 pckg taco seasoning
- 1 cup chopped fresh cilantro
- 8 oz sour cream
- salt/pepper to taste

Directions:
1. Add chicken, canned vegegetables (don't drain), water, taco seasoning, and spices to a soup/stock pot
2. Bring to boil, boil 5 minutes, then cook on low for 10 minutes
3. Add sour cream and cilantro, stir and simmer 5 more minutes
4. Serve with shredded cheese, tortilla chips, etc.

Hmmm, I have thought MANY times about giving up rich foods for lent. For me...sugar/dessert stuff. Good for your husband! Soup and salad is also a good way to focus on the HEALTH of our miraculous bodies God has given us!

Oh don't you just hate that bad mom feeling. I think us moms can be too hard on ourselves. Glad your boy is feeling better.

I just tried Chicken Posole for the first time this week. I didn't make it myself, but I got the recipe. It was so yummy. I'll find the recipe and shoot you an email.

From my Deen Brothers Cookbook...they cook as good as their Mama

Creamy Clam and Corn Chowder
5 slices bacon, coarsely chopped
2 tablespoons unsalted butter
1 large onion, finely chopped
2 medium red bliss or russet
potatoes, peeled and
finely chopped
2 celery stalks, finely chopped
1 teaspoon dried thyme
3 cups low-sodium chicken broth
Salt and freshly ground
black pepper
2 1⁄2 cups half-and-half
2 6 1⁄2-ounce cans chopped clams
in clam juice, undrained
3 cups frozen corn kernels, thawed
Chopped fresh Italian parsley leaves
Bottled hot pepper sauce (optional)

1. In a large saucepan, cook bacon over medium-low heat for 10 to 15 minutes or until crisp, stirring
occasionally. Add butter and stir to combine. Add onion, potatoes, celery, and thyme. Increase heat to
medium and saute about 10 minutes or until onion softens. Add the broth; bring to a boil.
Reduce heat and simmer about 10 minutes or until potatoes
are tender. Season to taste with salt and pepper.

2. Stir in the half-and-half, clams, and corn. Reduce
heat to low. Cover and cook for 20 minutes. Taste and adjust the seasoning, if necessary.
Ladle the chowder into bowls and garnish with chopped parsley. If desired, serve with hot sauce. makes 6 svgs
